Do not mix the batter for too long after adding fruit salt or baking soda. Otherwise, you will end up with a flat and rigid dhokla. Once added, the batter starts frying, immediately pour it into the bowl containing ghee.
While steaming the dhokla, keep a cup of water in the microwave. This will create enough moisture inside the microwave to create a soft and spongy instant dhokla.
When tempering the dhokla, make sure that it is hot to the touch, but the piping is not hot. Allow it to cool slightly before adding the tempering syrup.

- 0.3 tsp sugar
- pinch hing / asafoetida
- 0.15 tsp salt
- lemon juice0.3 tbsp
- 0.3 tablespoon oil
- 0.3 cup water
- 0.15 tsp eno fruit salt
- 0.45 cup besan / gram flour
- 0.9 tbsp rava / semolina / suji, fine
- 0.15 tsp ginger paste
- 0.6 chilli, finely chopped
- pinch hing / asafoetida
- few curry leaves
- 0.6 chilli, slit
- 0.08 cup water
- 0.3 tsp sugar
- 0.08 tsp salt
- 0.3 tsp lemon juice
- 0.9 tsp oil
- 0.15 tsp mustard
- 0.15 tsp cumin / jeera
- 0.3 tsp sesame / til
And For Garnishing
- 0.6 tbsp coconut, grated
- 0.6 tbsp coriander, finely chopped
Steps of Dhokla Recipe – Easy Vegetarian breakfast
- First, in a large mixing bowl, add 1, cup gram flour and 3 tablespoons rava.
- Add teaspoon ginger paste, 2 chillies, gt turmeric, 1 teaspoon sugar, pinch hing, salt teaspoon salt, 1 teaspoon lemon juice and 1 teaspoon oil.
- Prepare 1 cup of water or a smooth solution as required.
- Also, add ½ teaspoon of Eno fruit salt. You can optionally use a pinch of baking soda.
- Immediately steam the batter of Dhokla for 20 minutes.
- Also, cut the dhokla and add the tempering.
- Garnish the dhokla with 2 tablespoons chopped coriander leaves and 2 tablespoons freshly grated coconut.
- Finally, immediately serve the Khaman Dhokla with green chutney and tamarind chutney.
If I will use baking soda instead of eno, then when (at which step) to add baking soda?
Add baking soda to the same step in which eno is added.
If fruit salt is not available, what can we use instead?
you can use 1/4 teaspoon baking soda in place of Eno fruit salt.
